Michael’s passion for wine is fundamental to the Lympstone Manor experience. Inspired by the outstanding quality of wines produced from grapes grown in Devon, as well as by the ideal southwest facing position of our grounds leading down to the Exe estuary, Michael’s dream is to plant a vineyard to produce classic champagne-method sparkling wines for guests to enjoy at Lympstone Manor. Vineyards, like dreams, take time to be transformed into reality, time for roots to penetrate deep down and become established. Once planted, it is likely to be at least four years before the first grapes will be harvested and vinified, and then a further period of time for maturation on the lees for the secondary fermentation in the bottle. However, as always, the best things in life are most certainly worth the wait.
In the meantime, we have close relationships with local winegrowers producing outstanding wines that are on our wine list, and we can arrange visits to learn, taste and enjoy direct at the source.
