On this year’s World Ocean Day, the United Nations theme is Sustainable Fishing Means More…
This year’s theme underscores the importance of sustainable fishing practices in ensuring the health and abundance of marine resources for generations to come.
Michael is honoured to be one of the many who are advocating for a more sustainable and eco-friendly future. Michael is dedicated to seasonal and regional produce, working closely with local suppliers. Learning and understanding their practices and how we can better resource our ingredients and supplies to support both our community and sustainability. Our team in the kitchen source ingredients that are fresh, quality, local and seasonal produce.
Along with Relais & Châteaux properties around the world, we’re raising awareness of sustainable seafood.
Not only on World Ocean Day, but as a year-round pursuit.
We work closely with our suppliers who prepare their freshly caught fish each day from their fleet of fishing vessels. Our suppliers care deeply about our land and seas and adhere to the Seafood Responsible Fishing Scheme. If they notice that certain stocks start to run low, they switch their attention to lesser known fish in order to conserve each breed and ensure bountiful supplies year round.
In order to create a seamless dining experience for you and your fellow guests, we kindly request that the entire table opts for the ‘Taste of the Estuary’ tasting menu when making a reservation.
