HEAD SOMMELIER
Originally from Poland, Tomasz moved to London in 2013, where he started working for Richard Corrigan in his Mayfair restaurant. Tomasz says he “was lucky to have worked with, and met many passionate people” and this experience has assured him that the wine world is his life’s ultimate passion.
After receiving his first WSET qualifications, he decided to pursue a new challenge and in autumn 2014 became a member of Gordon Ramsay’s opening team at Heddon Street Kitchen, where he spent the next year and a half. Working for a large group of restaurants and having the possibility to exchange his knowledge and experience with many sommeliers was one of many benefits.
In the meantime, he was studying and preparing for Court of Masters Sommeliers courses, which he successfully finished in January 2016, becoming a Certified Sommelier by CMS.
A few months later, an opportunity to join Shangri-la Group came along. It was challenging and rewarding at the same time. A wider perspective opened up and Tomasz was able to discover and learn many new aspects in his role. Being in charge of the Wine Programme at the Hotel, constantly liaising with their suppliers to improve wine lists, creating new projects and their implementation was “truly inspiring”. After three years at the Shangri-la, he decided to leave London and move to the picturesque area of Devon.

Lympstone Manor is a project, where food and wine exist in symbiosis. He’s extremely excited to be a part of a team of the most passionate people he has ever worked with. Having ‘inherited’ a fantastic wine list, Tomasz will do his best to take it a step forward and make it even more appealing to our guests. Alongside the wine list, managing the cellar is another exciting adventure and Tomasz wait for the next year and the first harvest from our vineyard!
