When Michael first visited Lympstone Manor, he was not only inspired by the potential to transform a dilapidated mansion into what has become a luxury country house hotel and highly acclaimed Lympstone Manor, he was equally excited at the prospect of planting a vineyard on the southwest-facing parkland overlooking the beautiful Exe estuary.
Vineyards, like dreams, take time to be transformed into reality, for roots to penetrate deep down and become established, for grapes to ripen, for wines to be made, for the secondary fermentation, and for the complexity to develop that only comes from lengthy maturation on the lees in the bottle.
In May 2018, 17, 500 vines were planted to produce high-quality English sparkling wine utilising the varietals of Champagne: Pinot Noir, Chardonnay and Meunier. The first harvest was in September, 2020. After an exceptionally warm growing season, the harvest, though small from young vines, was of very high quality. The Triassic Pinot Noir 2020 has won gold at the 2023 International Wine Challenge as well as a bronze award in the International Wine and Spirit Competition.
When Michael first envisaged cultivating a vineyard at Lympstone Manor, he wanted to produce a single-estate Devon sparkling wine of the highest quality, a wine that is beautiful to enjoy as an aperitf yet with enough structure to accompany his finely considered cuisine. The result is Lympstone Manor Classic Cuvée, a blend of Pinot Noir, Meunier, and Chardonnay. The Classic Cuvée has won a silver medal in the International Wine Challenge 2024 and a LWC 2024 (London Wine Challenge) gold medal and Best in Show.
We have now launched the first release of a still Rose wine from our estate in 2022, aptly named “Isabeau” after Michael’s daughter. The Lympstone Manor Estate 2022 Isabeau Rosé is produced from the “taille” pressing at the winery and is a field blend of the Pinot Noir, Chardonnay and Meunier grapes. The Isabeau Rosé has won a bronze medal at the International Wine Challenge 2024 and a LWC (London Wine Challenge) 2024 silver medal.
In 2024 we launched our “Spirit of Lympstone Manor” Eau de Vie de Marc distillation using the grape pomace from the Pinot Noir, Meunier and Chardonnay grown in the Lympstone Manor vineyard after the grapes have been pressed during the winemaking process, our premium gin, and our limited edition 2022 Edwards Chardonnay marking the first white wine to be produced from our vineyard.
