The Wine Cellar at Lympstone Manor Hotel

Michael spent formative years of his career working and learning his craft in France alongside some of the country’s most famous and iconic chefs. At the same time, he learned about wine and gained a love for the French classics.

Michael’s passion for wine is fundamental to the Lympstone Manor experience, with two basement cellars comprising of 600 bins and a wine tasting room with state of the art Wine Emotion dispense machines and a bespoke-built granite wine tasting table.

Inspired by the outstanding quality of wines produced from grapes grown in Devon, as well as by the ideal southwest facing position of our grounds leading down to the Exe estuary, 17,500 Chardonnay, Meunier and Pinot Noir vines were planted in May 2018 set amongst the house and the estuary to produce classic Champagne-method sparkling wines for guests to enjoy at Lympstone Manor.

The Wine Emotion System

Our Wine Emotion system of dispense consists of six state-of-the-art machines that allow us to dispense 24 different wines by the glass by using inert argon gas to keep them in top-condition over an extended period of time. Using this system, we have eliminated the worry of deterioration in quality through oxidisation, thus allowing us to offer our guests a range of wines of all styles and levels of quality

So, why is this system so important to us? With cuisine as refined and precise as Michael’s, the opportunity to offer a wide range of wines by the glass enables us to match as precisely as possible the best wine for each dish. Indeed, our Head Sommelier now has the facility of the entire 600- bin wine cellar at their disposal when specifically searching out wine flavour profiles to match all the elements on each plate. Interestingly, it also demonstrates an important and evolving trend whereby knowledgeable guests understand and appreciate the enhanced pleasure that such matching of food and wine brings.

As a result, more and more of our guests choose to enjoy either wines by the glass, suggested by our sommeliers for each à la carte dish, or else choose matched wine flights to accompany Michael’s tasting menus.
