Lamb Koftas with Tzatziki

If you’re looking to spice up your BBQ then we have the perfect recipe for you with the super simple Michael Caines Lamb Koftas with Tzatziki.

With the summer season in full swing and the sunshine beaming down on us all, there is no better time to get the BBQ out to enjoy great food with family and friends.

Serves 4

Ingredients

Lamb Kofta

400 grams of lamb shoulder mince
1 tablespoon red onion chopped
1 teaspoon fresh parsley chopped
1 teaspoon fresh mint chopped
1/2 teaspoon cumin ground
1/2 teaspoon ras el hanout
1/2 teaspoon crushed/micro grated garlic
1/2 teaspoon fresh red chilli diced small
Salt
8 long bamboo skewers soaked in water overnight
Olive oil

Method:

Place the mince into a bowl, add the rest of the ingredients and a pinch of salt and mix together well.
Test the mixture for season by frying in a pan a little of the mixture.
Divide the mixture into 8 equal balls and mould the balls into a long sausage shape, then skewer them onto the bamboo skewers and place onto a tray.
Cling film and place these into the fridge and rest for 30 minutes.

Tzatziki

300 grams of greek yoghurt
1/2 cucumber cut in half lengthways, seeded and grated
1 /s clove of garlic crushed/micro grated
1/2 lemon juice
Salt

Method:

Mix all the ingredients together and season with salt, place into a bowl.

Garnish

1 red onion
1 red pepper
2ml olive oil

Pitta breads
Hummus

Method:

Cut the red onions in half and then into segments. Cut the red peppers into strips. Heat the oil in a frying pan and add the vegetables, season with salt and pepper. Keep warm

Cooking

Remove the Koftas from the fridge and dribble with a little olive oil. Place onto the BBQ or green egg and cook for approximately 2 minutes on each side. 

Place the pitta bread onto the grill to reheat, remove and place onto your serving plate with the garnishes.
